Start by cooking the rice. I used a rice cooker for mine but you can use whatever you have. Just follow the instructions on the package. Cooking times will differ. To the rice and water (before cooking), add the juice of 1 fresh lime and a small handful of chopped cilantro.
Next, make the mango salsa. Chop up 2 mangos, 1/2 of a small white onion, and a small handful of mint leaves. Place all in a container and squeeze the juice of 1 fresh lime over it. Mix it up and let sit.
For the seared ahi tuna, you will need about 3-4 minutes to cook this. Cut desired amount into small, long slices. Heat up a pan on the stovetop. Once the pan is hot, spray with non-stick cooking spray. Quickly heat each side of the ahi tuna on the pan. Season with desired seasonings (I used a little bit of black pepper and put a splash of teriyaki sauce in the pan). I prefer to leave mine raw in the middle but cook to desired amount of doneness.
When it is time to plate, prepare desired amount of chopped fresh cucumber, avocado, and sushi ginger for toppings.
Place cooked rice on the bottom of the bowl. Add your mango salsa, cucumber, sushi ginger, avocado, and seared ahi tuna. Drizzle teriyaki sauce over the bowl and add a few sprinkle of fresh chopped cilantro.
